These simple meringue-style cookies are made with egg whites and a sugar substitute, resulting in a very low-calorie dessert or snack. The recipe yields approximately 100 cookies.
1. Whisk egg whites, cream of tartar, and vanilla until small bubbles form.
2. Slowly add in sugar substitute until stiff peaks form and the mixture is glossy.
3. Pipe onto a lined baking sheet to prevent burning.
4. Bake at 175-200°F (80-93°C) for 1 hour and 15 minutes. The goal is to dry them out, not bake them.
5. Turn off the oven and let the cookies sit for another couple of hours (or overnight if you have the time!) to fully dry.
6. Enjoy!
