1. Over medium/low heat, simmer off some moisture from the can of pumpkin puree for 5-10 minutes, stirring continuously.
2. Blend oats into a flour and then combine all loaf ingredients (pumpkin puree, oat flour, egg whites, unsweetened apple sauce, pumpkin spice latte whey protein, zero calorie brown sugar, cinnamon, pumpkin pie spice, baking powder, baking soda, salt, vanilla) in a mixing bowl until well combined.
3. Pour the batter into a loaf pan and bake at 350°F (175°C) for 40-45 minutes or until a toothpick inserted into the center comes out clean.
4. While the loaf cools, prepare the frosting: combine 8oz 1/3 fat cream cheese, 4oz non fat greek yogurt, 1 scoop vanilla whey, and 1/4-1/2 cup powdered sugar substitute. Mix until smooth, adding more powdered sugar substitute to taste if desired.
5. Allow the pumpkin loaf to cool completely before topping with the protein cream cheese frosting.
6. Enjoy!
