1. Combine all cake ingredients.
2. Pour the cake mixture onto a lined baking sheet and spread evenly.
3. Bake at 350°F (175°C) for 14-16 minutes or until a toothpick comes out mostly clean. Do not overbake; watch closely.
4. Once the cake is baked, dust a towel with zero-calorie sugar to prevent sticking. Carefully invert the cake onto the towel and roll it into a tight log shape (this helps the cake roll easily with the filling later without breaking). Allow it to cool completely in this shape.
5. While the cake cools, mix all filling ingredients until smooth.
6. Once the cake is cool, unroll it gently, spread the filling evenly over the cake, and then re-roll it into a spiral shape.
7. Cut the roll into 12 individual rolls and place them in the freezer until firm.
8. Melt the low-sugar chocolate with coconut oil. Dip each frozen roll into the melted chocolate to coat.
9. Once the chocolate coating is hard, enjoy!
