If you fell into the Built Bar craze, you are going to love this homemade version! These protein bars are low calorie and high in protein, making them a great healthy snack.
1. Pour milk into a saucepan and sprinkle gelatin on top in a thin layer.
2. Mix slightly and allow the gelatin to bloom (hydrate); it should turn into a thick goo (~10 minutes).
3. Place over low heat and mix until it runs thin.
4. Add to a mixing bowl and allow to sit for 5 minutes to cool slightly.
5. Add protein and whisk until it doubles or triples in volume (can take a while, be patient but don’t let the mixture get cold, it will start to harden and make transferring to a pan more difficult).
6. Pour into a parchment-lined pan and allow to harden for at least 2 hours.
7. Once ready, cut into shapes and cover in melted chocolate + coconut oil mixture (coconut oil helps thin out the chocolate for a thinner shell over the marshmallow).
8. ENJOY!
